Chocolate Zucchini pound cake with muesli

Here is THE snack to prepare over the weekend for a week full of delicious zucchini cake satisfaction (yes, yes, this will keep all week!).


  • 1 1/2 cups grated and drained zucchini
  • 1/2 cup honey
  • 2 eggs
  • 1/3 cup almond milk
  • 1/4 cup Greek yogurt
  • 2 teaspoons vanilla
  • 2 cups wheat or spelt flour
  • 1/2 cup Müska Natural
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 cup dark chocolate pieces


  1. Preheat oven to 350 F.
  2. Butter a loaf pan and place parchment paper inside.
  3. In a bowl, mix eggs, honey, milk, vanilla and yogurt until the mixture is smooth. Add zucchini.
  4. In another bowl, add the flour, Müska, baking powder, baking soda, salt, cinnamon and nutmeg, and mix well.
  5. Combine the first mixture with the second and mix well.
  6. Add the chocolate.
  7. Pour the batter into the pan and bake for about 45 minutes, or until a toothpick that you stick in the center comes out clean.
