Here is THE snack to prepare over the weekend for a week full of delicious zucchini cake satisfaction (yes, yes, this will keep all week!).
Ingredients:
- 1 1/2 cups grated and drained zucchini
- 1/2 cup honey
- 2 eggs
- 1/3 cup almond milk
- 1/4 cup Greek yogurt
- 2 teaspoons vanilla
- 2 cups wheat or spelt flour
- 1/2 cup Müska Natural
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 tablespoon cinnamon
- 1/4 teaspoon nutmeg
- 1 cup dark chocolate pieces
Directions:
- Preheat oven to 350 F.
- Butter a loaf pan and place parchment paper inside.
- In a bowl, mix eggs, honey, milk, vanilla and yogurt until the mixture is smooth. Add zucchini.
- In another bowl, add the flour, Müska, baking powder, baking soda, salt, cinnamon and nutmeg, and mix well.
- Combine the first mixture with the second and mix well.
- Add the chocolate.
- Pour the batter into the pan and bake for about 45 minutes, or until a toothpick that you stick in the center comes out clean.
