What is delicata squash?
Delicata squash is native to North America and gets its name from its delicate skin, which is edible along with the rest of the squash. It’s rich in vitamins A and C.
Cooking delicata squash is easy, particularly if you cut it into rings using its natural grooves as a guide. Once it’s cut, roast it with oil, salt and pepper in a 450°F oven or cook it in a frying pan.

The Delicata Squash Salad recipe
Preparation time: 40 minutes
Cooking: 45 minutes
Ingredients
For the squash:
- 1 delicata squash, sliced
- 1 tsp. honey
- 1 tsp. ground coriander
- ½ tsp. curry powder
- A pinch of salt and pepper
- 1 tbsp. olive oil
For the salad:
- 3 cups kale, de-stemmed and chopped
- 1 cup of red cabbage, chopped
- ½ red onion, diced
- 1 apple, sliced or diced
- 1/3 cup Dried Cranberries
- 1/3 cup feta, cubed
For the salad dressing:
- 2 tbsp. tahini
- 2 tbsp. nutritional yeast
- 2 tbsp. lemon juice
- 1 tsp. curry powder
- 1 gousse d’ail hachée
- 1 tsp. maple syrup
- 3 tbsp. water
For the savoury granola:
- 2 cups MĂ¼ska Natural
- ¼ cup Pumpkin seeds¼ cup chopped almonds
- 1 tsp. curry powder
- ½ tsp. ground cumin
- ½ tsp. ground coriander
- ½ tsp. paprika
- A pinch of salt
- ½ cup of Parmesan cheese, grated
- 1 egg white
- 2 tsp. canola oil
The recipe
- Place the squash slices on a baking sheet and coat with the rest of the ingredients.
- Bake at 400F for 20 minutes, or until the squash is fully roasted.
- For the salad dressing: Whisk all of the ingredients together.
- For the savoury granola: Mix all of the dry ingredients together in a bowl.
- Add the egg white and oil to the dry ingredients and mix well.
- Spread on a baking sheet and bake at 350F for 20-25 minutes.
- Put all the salad ingredients in a bowl and toss with the dressing, then garnish with the granola.
