Mesfouf with Sweet and Salty Muesli

Our Müska is a muesli-style blend with dukkah. We wanted to draw on this Middle Eastern inspiration for this recipe so that we could showcase this versatile, flavourful muesli.

What is Mesfouf?

Mesfouf, or Masfouf, is a North African dish – to be precise, it’s found in Algeria and Tunisia. It’s a kind of couscous, made with fine semolina and butter or olive oil.

Mesfouf is a popular dish that can be sweet or savoury. It is often enjoyed during Ramadan, or during other holidays or family get-togethers.

The recipe for Mesfouf revisited with muesli

Preparation time: 20 minutes
Portions: 2 to 3 people

Ingredients

  • 1 cup (about 110g) of Müska Natural
  • 1 pinch of salt
  • 1¼ cup of water
  • ⅓ cup (45g) diced dates
  • ⅓ cup of pine nuts
  • ⅓ cup of pistachios

In accompaniment:

  • plain, salted and peppered yogurt
  • A few minced mint leaves
  • A few olives (green or black), sliced
  • 1 drizzle of olive oil
  • Lemon wedges

The recipe

  1. Boil the water in a saucepan or in the microwave. Add the Müska Natural, a pinch of salt and the chopped dates. Cover and let stand 15 to 20 minutes to get the texture of an oatmeal.
  2. In the meantime, dry toast the pine nuts in a pan, then the pistachios, and prepare the accompaniments (yogurt, mint, olives).
  3. In each bowl or deep plate, arrange the date Müska on one side, sprinkle with pistachios and toasted pine nuts. On the other side, add the yogurt, sprinkle with sliced olives and minced mint.
  4. Drizzle with olive oil and lemon juice if desired. Serve for brunch or dinner, as you wish. Enjoy your meal!
