1. Mix the wet ingredients together in a large bowl.
  2. Mix the dry ingredients in another bowl and add them to the wet ingredients.
  3. Then, add the white chocolate.
  4. Make approximately 16 small balls (1 tablespoon each) and place them on a parchment paper-lined cookie sheet.
  5. Press lightly on each ball and bake for 15 minutes at 350F.
  6. For the icing: Beat all ingredients together with a hand mixer until creamy! Spread on the cooled cookies.
