1. Place the squash slices on a baking sheet and coat with the rest of the ingredients.
  2. Bake at 400F for 20 minutes, or until the squash is fully roasted.
  3. For the salad dressing: Whisk all of the ingredients together.
  4. For the savoury granola: Mix all of the dry ingredients together in a bowl.
  5. Add the egg white and oil to the dry ingredients and mix well.
  6. Spread on a baking sheet and bake at 350F for 20-25 minutes.
  7. Put all the salad ingredients in a bowl and toss with the dressing, then garnish with the granola.
